Pyramid Ranch located in Anna, Texas, features Certified Pinzgauer Beef, one of the most flavorful and tender beefs on the market.  All of our beef is produced from pureblood Pinzgauer cattle, born and raised and lovingly grown to maturity here at the ranch.  For 40 years, we have raised only Pinzgauer, thus allowing us to offer a select foundation herd of outstanding females who produce fast growing bull calves for the beef program. 

 

Why Pinzgauer?

Pinzgauer cattle are native to Austria and have been raised in the United States since the early 1970's.  Pinzgauer cattle possess a unique combination of rapid growth, excellent feed conversion and superior carcass quality.  GeneSTAR, a large national testing agency, has star rated Pinzgauer beef as superior in flavor and tenderness.

 

GeneSTAR Tenderness identifies animals that are more likely to produce tender cuts of beef.  GeneSTAR Tenderness is a DNA marker test for two important genes, Calpastatin and & Calpain, involved in the post-morteum tenderization process of beef.  Animals carrying the favorable forms of the genes have been found to significantly reduce the proportion of "tough" eating experiences.

 

The USDA Meat Animal Research Center trait averages for steers of Pinzgauer breeding, which have over 61% choice, over 69% retail product and rib eye area of 11.28 square inches.  The tenderness test for Pinzgauer was the best at 4.47kg, testing better than Angus and other breeds.
